Wonderbag Non-Electric Portable Slow Cooker with Recipe Cookbook, Red Batik


This just arrived yesterday and today was only my first use. From what I can tell it does what it is supposed to do, though the instructions might not be completely clear.

"Best you know this" announces the back page of the included booklet, and the "Times" chart suggests that rice and grains need five minutes on the stove and at least 45 minutes in the bag. It would be clearer to understand that it means five minutes on the stove *after* bringing the rice to a boil. Expect at least 10 minutes, possibly more for larger quantities.

I brought a pot of short grain rice to a boil, then simmered for 5 minutes to be sure that the rice was heated through. I opened up the Wonderbag, put a dish towel in the bottom (since the rice had boiled over a bit) and put the pot on top of the towel. Then I covered the pot with another towel, put the Wonderbag lid on the pot, and closed up the bag. I set the timer for an hour.

After an hour I opened the bag (and got a blast of steam) and checked the temperature of the rice. It was over 182°F, definitely hot enough to cook a grain. The rice was cooked perfectly.

The exterior of the bag was cool to the touch, and the countertop under the bag was cool. The interior was very hot, which tells me that the bag insulation is doing a great job of retaining the heat.

Since my pots have long handles, I picked up two pots with short handles and tight fitting lids to use in this bag. A 2 quart pot and a tall 8 quart pot both fit in the bag (individually--not at the same time,) and it's easy to arrange the bag to fit around either pot.

With all this insulation the bag is LARGE. It's going to take up a lot of space when not in use. I'll probably air it out and store it in a garbage bag in a closet somewhere. There's no room in my kitchen for something this large.

There's also no way to wash the bag. You can spot clean it if something spills, but you can't toss the bag into the wash. Wrapping the pot up in clean dish towels is a very good idea.

The Wonderbag is big and bulky and takes up a lot of space, and it's difficult to clean. But it does what it is supposed to do. It saves energy and it's going to keep my kitchen cool in the summer. In a hot place that last reason is good enough for me.

02/04/2014 update: It turns out that storage hasn't been a problem. I never store this bag. It gets used almost daily, and when I'm done with it I drape it over a bar stool to air out. I've even left it there when friends visit--no one sits on the bar stools anyway, and it creates instant conversation.

I've made lots of different things with this bag, but my favorite is rice. With a pot on the stove or even a rice cooker, there's always an overcooked layer of rice stuck to the bottom. Not with the Wonderbag. I'm still amazed when I open the lid and the entire pot of rice is perfect. I cook rice in the bag for an hour, but I've left a pot of rice in the bag for nearly two hours once, and it was still very hot and not overcooked.

Two days ago I started some dried kidney beans just before bed. I boiled them for half an hour before putting them into the bag for exactly twelve hours. They were just slightly firm, so they could have cooked a little more, but even after 12 hours they were warm enough to serve. I'll probably soak the beans next time. (Thanks to David Garcia for reminding me to point out that kidney beans must be boiled for several minutes!)

I've got my share of impulse buys and kitchen gadgets that seemed like a great idea at the time and that never get used. This bag isn't one of those. It saves me money, since the stove and oven aren't on for hours; it's easy, because no stirring or attention are required at all; and it does a great job of cooking food for hours. It keeps food hot enough for long enough that I'm not worried about food safety. It's such a simple thing and a really great idea. Since my concern about storage has turned out to not be a problem, I guess I should upgrade my review to five stars.

6/17/2015 update: Someone just reminded me of another advantage. I live in an area that has frequent power outages. Most of the time it's for a second or two, just enough to make all the clocks blink. Sometimes they last for hours.

I used to get home and wonder about the food in the crock pot. How long was it sitting on the counter without power? Is it fully cooked? Has it spoiled? I've tossed a few meals because it wasn't worth the risk.

Because the Wonderbag is just an insulated bag, this isn't a problem. The temperature when I open the bag is the coolest it's been all day. Ingredients: 1 pound ground beef or ground turkey. 1 small onion, chopped. 1 medium red or green bell pepper, chopped. 1 garlic clove, finely chopped. 1/2 teaspoon ground chipotle chili pepper. 1 can (28 ounces) of crushed tomatoes. 1 can (15.5 ounces) black beans, rinsed and drained. 3.5 cups of beef stock. Directions: Cook ground beef, onion, red pepper and garlic in 4-quart saucepan, stirring occasionally, until beef is browned and vegetables are tender. Stir ibeef stock - Beef and chipotle chile pepper until stock is melted. Stir in tomatoes and beans. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, until heated through. This takes about 15 minutes. Place your lidded pot in the Wonderbag for for a minimum of 1 hours and up to 4 hours for flavors to mingle. Serve, if desired, with shredded cheddar cheese, sour cream and/or chopped cilantro.

I decided to write a review for two reasons. First, this is the BEST THING EVER to serve a crowd. So much so, I am thinking of buying another one just to have a backup! Secondly, some of the answers to the frequently asked questions are incorrect, incomplete or just plain ignorant and I wanted to set the record straight.

My husband bought this for me for Christmas. It has quickly became our go-to slow cooker as it sits on our countertop it is used so much. We cook in it at least a couple of times every week. I love that it is timer programmable, has an automatic switch to warm feature, it is very well made and does not look or feel cheap. Best of all is that the actual crock portion is made of metal and not stoneware. I have cracked so many crocks since we moved out on our own, that this one feature was worth switching to the HB brand. I also like that you have the option of using the crock piece on your stovetop to brown meats and veggies, but you don't have to if you don't want. It does cook very hot, I love that! Some slow cookers don't cook very hot, this one I never have to doubt that our meals are ready after only 5 short hours on Low. The only thing that I don't care for is that the metal crock handles and the actual handles and crock itself get very hot while cooking. We have a toddler, so I make sure it is far back on the counter so his little fingers can't touch it. Other than that one aspect, it is great! I would buy it all over again if needed and highly recommend it.

The first question I had when I looked at this thing was “what purpose does this serve?” Apparently, multi-cooker appliances are now a thing and I missed the trend. So if you’re new to this like me, know that this little appliance acts as an oven, stovetop with pot, and slow cooker. It combines all of these functions rather gracefully, actually, which is in stark contrast to my general experience with convergence devices.

That isn’t to say my experience with this appliance hasn’t had a couple of bumps – it has – but the true worth of this or any other appliance is whether the potential outweighs the bumps. In this case, I think it does.

I’ll start with the looks of the thing. Stainless is nice but I think it’s also getting a little passe. If you want pop and attitude, the Candy Apple Red model is your choice. The photos don’t really show the true color. Think modern Ferrari. In fact, with the color, the glass top, and the chrome accents, I kind of think this appliance SHOULD be sporting a Ferarri logo somewhere. Simply put – it’s beautiful. Take this to cooking club and you will be the toast of the ball. It’s also a bit larger than I thought it would be, with thick double-walls surrounding the removable pot (er, “cooking chamber.”). This construction is important, as temperatures in this thing can go up as high as 450 degrees. Even at full bore, the outer surface of the appliance didn’t get overly hot. Very important for a countertop cooking device. The pot itself is aggressively nonstick, something that is greatly appreciated…you’ll see when I describe my experiences with braising.

So what do you use this thing for? Well, it’s pretty general purpose. Basically anything you can do in an oven or stovetop you can do with this thing. And now I hear a couple of you saying “well then, why do I need it?!” And that’s a good question. In my case, my oven takes FOREVER to heat up, which contrasts with the speed in which this appliance can get to temperature. You also have pretty good control of your temperature, either via preset modes or through a manual mode. Rare is the stovetop that will let you set a specific temperature as opposed to vague “med, med high” and so on. Sadly, although the manual temperature settings are within a fairly wide range, they are within a range nonetheless. The lowest you can manually set the temperature is 165 degrees. In the back of my mind I was thinking this would be useful as a kind of poor-man’s Sous Vide cooker, but 165 degrees is going to be too high for that cooking method. Adding frustration to the mix is that the device itself is perfectly capable of going below that (indeed, the yogurt setting works at a comfortable 110 degrees) but the manual setting interface won’t allow it. So bummer.

Rice, on the other hand, is very easy to make with this device…and you can make a LOT of rice. It’s roughly double the capacity of my rice cooker, although it seems somewhat slower. A full pot of rice took 35 minutes to make. Soup? Easy. In fact, this device makes for the easiest preparation of Onion Soup that I’ve ever seen. Fill the thing with cut up onions, let them cook down to carmelized golden goodness, then add your beef stock and other stuff. Easy. And appreciated is the aforementioned yogurt mode. Making yogurt requires very precise temperature control, which again is usually out of the range of a typical stovetop. I had previously relied on an Alton Brown method of using a heating pad combined with a bowl (not going to ever buy a dedicated yogurt maker), but this device allows me to free up a heating pad. It works. Roasting? Check. Steaming? Check. The only limit is your imagination.

Or is it?

So now for one of those bumps I mentioned – braising. At first glance you’d think this would be a natural for braising. The trouble is that braising requires a tight-fitting container to keep the liquid from evaporating. And out of the box, this device does not give you that. The lid has a hole in the top (just like a slow cooker’s), there is no gasket, and it’s well made but not heavy. My first attempt at braising was to do ribs (yes, ribs…cut them in two-bone portions and you can fit a full rack in here). The liquid evaporated away and left a black mess at the bottom of the pot. However, the pot is seriously nonstick and cleanup was effortless.

Time for a hack: extra-wide heavy duty aluminum foil, covering the pot with the lid on top of it. Not only did it work like crazy, but the unit heated up about twice as fast.

It dawns on me that now it looks like I’m gushing. I guess I am. This device does that to a person. When you open up that box, the possibilities seem endless. You can’t wait to get your hands dirty and see what it can do…and it can do a lot. It is invaluable for making baked beans from scratch, which includes soaking the beans. It makes mac and cheese with grace. Using this to make my Nana’s ragu is a dream.

So I may have been blindsided by the whole Multi-Cooker trend…but I’m rapidly getting up to speed. This device is a handy and useful addition to my kitchen.

For over 30 years I've used a round, crock pot. It cooks well, but I never liked roasting whole chickens vertically. Our research revealed that consumers are frustrated with hot surface temperatures on slow cookers. SLOW COOKER TIPS

For those new to the slow cooking method, there are a few things you should know. First, how high you fill the crock (also called the insert pan, stoneware, cookware or vessel) is important. To prevent overcooking, the crock should be filled anywhere from half full up to no more than one inch from the rim. Leave more room when cooking with liquid. When cooking soups or stews, leave a 2-inch (5 cm) space between the top of the crock and the food so the recipe can come to a simmer.

Secondly, lifting the lid during cooking will cause the crock to lose heat and it will take longer for your meal to cook. Unless your recipe specifically calls for stirring, resist lifting the lid. Last but not least, if you want to store leftovers after cooking, do NOT place the entire crock in the refrigerator. Contents will take too long to cool. Instead, divide leftovers into smaller containers and then place in the refrigerator.

Cooking Meat

A slow cooker is great for foods that are not naturally tender, like meat. Similar to braising, slow cookers tenderize meat slowly as it cooks. Cuts such as chuck roast, pork butt, short ribs or chicken thigh produce great results. These are the least-expensive cuts but also the most flavorful. If fat is an issue, refrigerate the contents after cooking and skim off the extra fat before serving. Note: you must thaw frozen meat and poultry before adding it to the slow cooker.

Cooking Side Dishes or Dessert

Main courses, soups and "one-pot" meals are not the only things that slow cookers are great for preparing. They are also perfect for making side dishes and dessert, especially when your main oven is full. How to Adapt Recipes

You can convert your favorite recipes to slow cooker recipes if you learn these important differences first:

Liquids do not evaporate in a slow cooker. So unless you are cooking rice, pasta, or beans, reduce amount of liquid to 1/2 of the amount called for in your recipe.
Fresh vegetables produce more desirable results than canned and frozen vegetables. Canned and frozen vegetables take less time to cook and can produce overcooked dishes.
Potatoes, carrots, onions and garlic should be washed and cut in uniform pieces, then placed in the bottom of the crock.
Ground beef should be browned and drained before slow cooking to remove grease.
Tender foods such as pasta, asparagus and snow peas should be added in the last hour of cooking.
Dairy products such as cheese, milk, and sour cream should be added in the last half hour of cooking.
Seafood such as shrimp, scallops, and fish should be added in the last 15-30 minutes of cooking.
